Food Mood: Crepes with Cheese and Herbs


To me crepes are the most versatile kind of food. They are easy to make, easy to fill, easy to please your guests with. Or your husband. When you don't feel like having meat or something sweet, and all you have in the fridge is cheese and vegetables, you can try your hand at this dish.
  
   
Ingredients for the batter:
  • 250 g all purpose flour
  • 2 eggs
  • 1 spoonful sugar
  • 1/4 tbs. salt
  • 50 ml olive oil
  • sparkling water (as needed, until the batter becomes fluid)
Ingredients for the filling:
  • any kind of creamy cheese (from fresh cheese to Camembert)
  • parsley
  • salt
  • red pepper
  • 3 cloves of garlic
Cook each crepe in a drop of olive oil and fill with the cheese mix. Serve with olives and lettuce. That simple.
